Wall Shelves in the Kitchen: How High, How Deep, and What Steam Does to Them

Where a shelf of oiled oak works in the kitchen, where it does not, and the numbers kitchen planners use for it. And why no wood hangs above the hob.

The kitchen is the room where wood has to put up with the most: steam from cooking, grease in the air, heat from the stove, and all of it every day. Still, many people want an open shelf there, because a wall cabinet closes the wall and a board leaves it open. The short answer first: a shelf of oiled oak works in the kitchen, with two rules. Not directly above the hob, and nowhere water is left standing. The rest is planning, and there are numbers for that.

How high above the worktop

Kitchen planners start from the working height. According to the kitchen standards of the AMK, the German kitchen industry association, the right working height is 10 to 15 centimetres below the elbow; in most kitchens that is around 90 centimetres. Above it you need room to work: the planning guide at nullbarriere.de, based on the ergonomics study of the TH Darmstadt, gives a clear distance of 40 to 50 centimetres to the worktop, 50 from a body height of 1.65 metres. That is the value for wall cabinets, and it applies to a shelf just the same: the lowest board hangs 50 centimetres above the worktop, at about 1.40 metres.

Above that, the gap between the boards decides. With 25 centimetres the second board sits at about 1.67 metres, with 35 at 1.77. Both are still within the zone you reach without stretching; whatever comes above is for things rarely needed. How deep: 15 centimetres on the wall, 35 on the floor

All KUUDU wall shelves hang with half boards, 15 centimetres deep. In the kitchen that is not a compromise but the reason they work above a worktop: a 35-centimetre board 50 centimetres up hangs over the chopping board like a cabinet; 15 centimetres leave the worktop free. On 15 centimetres stand spice jars, cups, glasses, a row of paperback-format cookbooks. Anything wider overhangs, and plates do not lie at all.

Plates, bowls and supplies therefore belong on a 35-centimetre board, and that one stands on the floor: a sideboard next to the run of units, a shelf on the free wall, a lowboard under the window. Steam, grease, heat: what the material does

Wood takes moisture from the air until it is in balance with it. At 20 degrees and 50 percent humidity, oak sits at 9 percent wood moisture, at 65 percent at just under 12, at 80 percent at 16. The German Environment Agency recommends 40 to 60 percent for living rooms, and for kitchen and bathroom, opening the windows wide for five to ten minutes during and after cooking. A kitchen aired like that is a normal room for wood. One where the steam hangs is not.

A KUUDU board is oak veneer on a core of powder-coated aluminium. The core takes on no moisture and does not warp; the veneer breathes with the room, but it is thin and firmly bonded. A humid summer or a pot of pasta bends nothing. The surface is sensitive in one place only: where water stands. That is exactly what happens directly above a hob without an extractor, when steam condenses on the cooler underside of the board and forms drops there. So the shelf hangs next to the stove and above the worktop, not above the pots.

Grease is the second question. In kitchen air it floats finely dispersed and settles over time as a film on everything that stands open, on glasses just as on wood. On oiled oak the film comes off with a cloth, warm water and a drop of pH-neutral soap, along the grain, wiped dry straight away. Vinegar, citrus and spray cleaners take the oil with them. What goes where

On the wall shelf, at eye level: what is used daily and does not get wet. Spices, cups, the olive oil, the two cookbooks that really lie open. On the 35-centimetre board below: plates, bowls, supplies in jars, and the heavy things low, because a board carries 20 kilos and a stack of plates gets heavy faster than you think.
